I indulged. Yep. I couldn’t help myself.
And, no, this is not the first time.
Such sweet memories of cinnamon toast, hand-pies, purple potato chips, Mom’s meatloaf, and shortbread cookies (just to name a few… š )… Foods that rate high in both flavor and comfort, they’re my jam.
Just something about simple foods, like this quick bowl of pasta at the end of a busy day, that hit the ol’ spot. Am I right?
Penne. Bacon. Olive Oil. Parmesan. Black Pepper.
That’s it.
You probably have everything you need.
Okay, maybe you don’t have bacon. So don’t include it. That’s alright.
We need meatless meals in our repertoire, too.
BUT, if you do have bacon, or a bit of pancetta in the fridge – go ahead and add it. You’ll be glad you did. PLUS – with a recipe like this – you can’t get your measures wrong either. You like cheese? add more cheese. Not the biggest fan of pepper? add less pepper…
Such freedom.

A little pasta, a splash of olive oil, a good grate of cheese, a crank of black pepper – and you’ve got yourself a meal.

Penne with Bacon, Black Pepper & Parmesan is a pasta-lover’s dream!
Ingredients
- 1lb. penne, cooked to al dente (according to box directions)
- 1 lb. bacon, fried to crisp and chopped
- 1/2 cup olive oil
- 2/3 – 1 cup freshly grated Parmesan
- 2 tsp. cracked black pepper
Instructions
- Combine penne, bacon, olive oil, Parmesan and black pepper in a large mixing bowl.
- Stir until fully mixed.
- Serve.
