Fried Egg Flatbreads with Greens, Bacon and Parmesan make mealtime fun! Eggs and bacon are not just for breakfast anymore!
Not sure my bacon and eggs have ever been so pretty.
So I had the impulse to create a meal using items that I already had in the fridge. I am definitely one to go for a crispy fried egg over almost anything at anytime (probably more than I should…) , nope, nope – crispy fried egg wins every time. 🙂 But sometimes I need more than just an egg and toast, you too?
Enter Fried Egg Flatbreads with Greens, Bacon and Parmesan. Oh, and hummus too…
Yes – this is a symphony of flavor!
THIS RECIPE REQUIRES:
- Mini Naan (Tandoor oven-baked pillowy flatbreads)
- Hummus
- Eggs
- Bacon
- Simple Vinaigrette
- Greens
- Salt & Pepper
- Parmesan
I toasted up the naan in a cast iron grill pan. This gives our vessel lovely crispy grill marks (which we soon hide with all those exciting toppings!) Then it’s all about the stacking.
Like wintertime fashion – layering is where it’s at with this flatbread!
LET’S BUILD THAT FLATBREAD:
- Add a smear of hummus to your grilled naan.
- Next – add a hefty handful of dressed greens, then a couple slices of bacon topped with a crispy fried egg.
- Finish with salt and pepper, a small drizzle of vinaigrette and Parmesan shavings.

Description
Fried Egg Flatbreads with Greens, Bacon and Parmesan make mealtime fun! Eggs and bacon are not just for breakfast anymore!
Ingredients
4 slices bacon
1/4 cup olive oil
1/8 cup balsamic vinegar
1/2 Tbsp. honey
1 Tbsp. water
1 tsp. dijon mustard
1 tsp. salt
½ tsp. pepper
2 store bought naan flatbreads
1/3 cup hummus (or amount to your liking)
2 cups greens (like spring mix salad)
2 eggs
Parmesan shavings
Salt and pepper
Instructions
Preheat oven to 400 F.
Place bacon on a sheet pan and bake for 15 – 20 minutes until crisp. Remove from oven and set bacon on a paper towel lined plate. Set aside.
In the meantime prepare the vinaigrette. In a small bowl, combine olive oil, vinegar, honey, water, dijon mustard, salt and pepper. Whisk until fully combined. Set aside.
Using a grill pan, or non-stick skillet, over medium heat, toast the naan.
Toss the greens with the vinaigrette and prepare to create the dish.
In a skillet over medium-high heat, melt 2 Tbsp. butter.
Crack eggs into skillet and season with salt and pepper.
Cover pan and cook until eggs are crispy and yolk is still soft.
Build the flatbread: Begin with your grilled naan, adding a nice smear of hummus, next – a hefty handful of dressed greens, a couple slices of bacon topped with a crispy fried egg, salt and pepper, a small drizzle of vinaigrette and Parmesan shavings.
Serve warm.

Yes yes yes!!! This is fabulous. Love the egg, of course. But it also shows how hummus can be used other than a dip. I used to make white bean sandwiches for my husband and I for road trips with the kids. They hated them because the car would smell like garlic! Anyway, I absolutley love what you did here!
